A . For chutney
1 Cup Shrimp Dried Shrimp
1 Cup Grated Coconut/Shredded Coconut
3 No Red Chilli Need roasted and crushed
4 No Shallot Sliced
0.5 Tablespoon Ginger
1 Sprig Curry Leaf 9 to 10 curry leaves
To taste Salt
2 Teaspoon Coconut Oil Sesame or peanut or sunflower oil

There’s no definitive recipe for the perfect coconut chutney. Sure, the regular chutney made using grated coconut, curry leaves, tempered mustard seeds and water is delicious, but you’d be surprised what a few little tweaks could do. You just need to find a recipe that works for you.

Dry roast the shrimp on a low flame for about 5 mins. Set aside.

Fry the shallots and red chillies in oil for a couple of mins. Add the grated coconut and continue roasting (do not brown, only let the water from the coconut run out). Set aside.

Combine the shrimps, heated coconut mixture with the rest of the ingredients in a stone mortar and pound till powdered well.
