1 Large Potato
1 Large Onion thinly sliced
2 Medium Tomato Chopped)
1 No Green Chilli / Chili pepper
1 Tablespoon Ginger Paste
1 Tablespoon Garlic Paste
2 Teaspoon Coriander Powder
1 Teaspoon Chilli powder
0.5 Teaspoon Turmeric Powder
1 Teaspoon Garam Masala
1 Teaspoon Cumin Seed / Jeera
To taste Salt
2 Teaspoon Oil
1 Tablespoon Coriander leaf
4 Cups Water

Try this and it is very simple and it is good to taste too. This egg curry goes well with roti, chapattis or rice.

Boil the eggs and peel the shells. Also boil the potato and cut it into cubes.
Heat oil in a pan and fry the boiled eggs until it turns to little brown.Keep it in a side.

Heat oil in a pan and fry the onions till they become golden brown.
Allow it to cool and grind it with the tomatoes and keep it aside.
Add turmeric powder, coriander powder, red chilli powder with very little water and make it as paste.

Heat oil in a pan and add the cumin seeds followed by the green chilli.

Add garlic and ginger, stirring constantly, fry for about 5 minutes, add 3 to 4 tablespoons of water to prevent the gravy from burning.

Then add the masala paste and salt and fry till the raw smell goes.

Now add the onion tomato paste and fry for 3 minutes.

Add little water and cover the lid and boil it for 5 minutes.

Add the potatoes and boil it for another 2 minutes.

Add boiled eggs.

Garnish with the coriander leaves.

Serve with chapati or paratha or rice
