1 Cup Sugar
20 No Saffron Threads
5 No Green Cardamom/Elaichi
6 NO Pistachio
8 No Almond
1 Pinch Salt Or Less

0.5 Lt Milk
1 No Lemon Big Size
0.25 Cup Sugar Powder
3 No Green Cardamom/Elaichi

Chena kheer is a traditional recipe which is prepared by adding Paneer/Chena in thick saffron milk. You can prepare this mouth watering recipe for any special occasion. It is a quick and simple dessert that you can make when you have unexpected guests at home.

For Making Chena / Paneer

Powder the cardamom seeds with the 0.25 Cup sugar until fine.

If you have powdered sugar & cardamom, take it in a side.

Prepare Paneer (chena)

Heat the milk in a heavy bottomed pan on low heat. and bring the milk to a boil.

Once the milk comes to a boil, turn the heat to low and begin to start condensing the milk until it becomes half its quality.

Add the sugar & cardamom powdered.

Take it off flame and allow it cool.

After 3 to 4 minutes, add lemon juice little by little and keep stirring constantly.

When milk coagulates completely, Paneer (chena) and water appears separately then stop adding lemon juice into it.

Strain the Paneer (chena) over a cloth and pour cold water over it to remove the sourness. Lift up the cloth from all sides and squeeze out the excess water.

Your Paneer (chena) is ready for cooking

Crumble Paneer (chena) as fine as you can with your fingertips.

Slice Chopped Pistachio,Almond.

Heat the milk in a heavy bottomed pan.

Once the milk comes to a boil, turn the heat to low.

Keep stirring the milk at regular intervals so that it doesn’t stick to the bottom of the pan.

When milk thickens up, add cardamom powder, saffron threads and powdered sugar. Add little water.

Add Crumbled Paneer (chena) to the boiling milk. Stir well to combine.

Add Chopped Pistachio,Almond to the boiling milk. Stir well to combine.

Let it simmer for about 5 minutes more.

Test for sweetness and adjust the amount of milk/condensed milk as desired. You need to have enough liquid base for the Paneer (chena) to swim in so keep an eye on the consistency.
