Heat water in a non-stick pan.

Add ginger and sugar and stir well.

Let it cook till the sugar dissolves.

Place the carrots in a juicer or mixer and squeeze out the juice along with mint leaves.

Squeeze out juice of lemon into individual glasses, add 3 tbsps ginger sugar syrup, ice cubes and top with the carrot juice. Stir well.

Serve chilled.
