Egg Masala Made in indian style, it is exceptionally good and easy when you are not in a mood to cook something elaborate but wish to make quick delicious food. It can be served with roti, plain paratha or flavored rice like jeera rice, biryani rice, pulao, coconut rice, coconut milk rice or any biryani varieties.

Boil eggs

Boil eggs for few mins. Break open and remove the shell carefully.

Heat oil in pan - Add pinch of Turmeric powder and fry egg lightly turned golden.

Cut it in half of boiled eggs with a knife.

Masala Paste and Light fry boild eggs

Heat oil in a pan - add the ingredients under 'To roast and grind' saute till onions turn golden brown and tomatoes turn mushy and raw smell leaves.

Cool down and grind to a semi fine paste.set aside.

Heat oil in pan - add mustard seeds,cumin seed and curry leaves let the mustard seeds crackle.

When oil is hot add chopped onion, tomato, capsicum, giner garlic paste, garam masala, boil for 3 min and then add salt, red chilli powder, pepper powder, jeera powder,dhaniya powder, turmeric powder and mix well and boil.garlic paste , onion fry till golden brown.

Then add the masala paste and fry for 2 mins.Then sprinkle little water, add required salt and allow it to boil until it forms a gravy.

Fry the eggs till the masala is coated well on all sides, dont fry for long.Add the fried egg to the masala and simmer to for 2mins for the masala to blend well. Then add coriander leaves and switch off.
