For Dosa
500 Gm Parboiled rice / Ukda chawal / Idli rice
100 Gm Urad Bean
75 Gm Garbanzo bean / Channa dal
0.25 Teaspoon Baking soda powder
To Taste Salt
50 Gm Puffed rice/Avalakki
As required Ghee
For red chutney
2 Teaspoon Garbanzo bean / Channa dal
5 No Red Chilli
To taste Salt
0.25 Inch Ginger
2 No Garlic

Dosa is a kind of pancake made from a fermented batter. Its main ingredients are rice and urad beans. Dosa is part and parcel of the South Indian diet and popular all over the Indian subcontinent. Traditionally, Dosa is served hot along with Sambar and Chutney. It can be consumed with Idli podi as well

Dosa paste preparation

Urad dal, chana dal can be soaked together for 5 to 6 hours and then grind to smooth paste.

Grind Rice and puffed rice together, along with water to get porable consistency batter. After grinding keep it in warm place to get fermented.

Note : Don't add salt and baking soda at this point] Batter should be not too thick or not too thin.

Morning Add baking soda and salt a small amount , Mix well.

Red chutney

Red chutney: add all ingredients mentioned under red chutney in a blender and grind with small quantity of water.

Making dosa

Keep stove in slow flame. When thawa is hot , sprinkle some water, When water evaporates, just pour dosa using the batter [spread it in circle], Apply lightly red chutney and spread it well on dosa, sprinkle black pepper powder . Close the lid for 2 min. Turn Dosa around to cook other side of dosa.
