300 gms Basmati Rice (Indian)
150 gms Grated Coconut/Shredded Coconut
40 ml Ghee
Black gram dhal Optional
30 gms Cashew Nut
6 gms Red Chilli
2 sprig Curry Leaf
2.5 gms Asafoetida / Hing
6 sprig Coriander leaf
To taste Salt

This is a South Indian recipe for coconut rice. Fried coconut and cashew nuts are added to boiled rice and garnished with ghee and coriander leaves.

Coconut rice is a dish prepared by soaking white rice in coconut milk or cooking it with coconut flakes.As both the coconut and the rice-plant are commonly found in the tropics all-around the world, coconut rice too is found in many cultures throughout the world, spanning across the equator from Southeast Asia to the Caribbean.

Cook Rice

Boil rice and keep aside

Fry coconut evenly to a golden colour on a slow fire and keep it in a side.
Heat 3 dessert spoon of ghee. Fry the cashew nuts and remove.
Fry the broken pieces of dry chillies, black gram dhal, and curry leaves well.
Mix rice, coconut, cashew nuts , 1 teaspoon of ghee and salt.
Serve hot garnished with coriander leaves.
