0.5 Cup Grated Coconut/Shredded Coconut
1 Cup Coconut Milk
1 No Lime zest Lime
1 No Lime/Lime juice/Lemon
6 Spring Coriander leaf Roughly chopped
To taste Salt

Coconut lemon rice is one of the sumptuous food / recipe ever made. It can be served both as a main or side dish.

Rinse rice and drain water till the water runs clear.

Prepare and cut the required Ingredients.

In a pan, over medium high heat, add coconut oil, add the rice to oil & cook for 3 to 4 minutes. Add the grated coconut & cook for 2 minutes.

Pour in the coconut milk and stir it to combine. Bring to a boil and add ½ cup water, cover it with lid, and reduce the flame to low.

Add salt as per taste & cook it for another 30 minutes in low flame. Turn off the stove & allow to sit with the lid for another 10 minutes.

Remove the lid, fluff the rice with a fork, then give a gentle stir & add Lime zest, Coriander leaf and Lime juice. Serve warm with raita.
