1 Kg Ladies fingers / Bhindi / Okra
2 No Onion Large sized ,chopped
1 Teaspoon Cumin Seed / Jeera
1 Tablespoon Ginger Paste
1 Tablespoon Garlic Paste
0.5 Teaspoon Turmeric Powder
1 Teaspoon Chilli powder You can add little more or less as of spice need
1 Tablespoon Coriander Powder
1 Teaspoon Garam Masala
1 Teaspoon Amchur powder / Dry mango powder
To taste Salt
4 Tablespoon Oil

Note :
If possible, wash the bhindi in advance and dry it at least 1-hours before making the recipe to remove excess moisture.

Wash and dry bhindi.Trim off the head and tail of the bhindi.Cut them in two halves

Onion finely chopped.

30 mins

Heat the oil in a pan, wok or kadai.Add the chopped Onion and and fry till golden brown.

Add cumin seeds to it and let it splutter.

Add ginger garlic paste.Fry till they are golden brown.

Now add cut bhindi with rest off the spices and stir well.

Cook it on medium flame and keep stirring it ocassionaly so it does not stick at bottom..

Keep cooking till bhindis are cooked with low/medium flame.

Serve bhindi masala hot with chapatis.
