500 Gm Ladies fingers / Bhindi / Okra
300 Gm Onion
1 Tablespoon Ginger Paste
1 Tablespoon Garlic Paste
1 Teaspoon Cumin Seed / Jeera
0.5 Teaspoon Turmeric Powder
1 Pinch Asafoetida / Hing
2 Teaspoon Coriander Powder
1 Teaspoon Amchur powder / Dry mango powder
0.5 Teaspoon Garam Masala
To taste Salt
4 tablespoon Oil

Wash and dry the bhindi and cut the stem and the tip.

Trim off the head and tail of the bhindi. chop the bhindi in 1 inch pieces. keep aside the chopped bhindi.
Onion finely chopped.

30 mins

Heat the 2 tbsp oil in a pan, wok or kadai.Add the chopped Onion and salt then add cumin seeds and hing. Let it splutter.

Add ginger garlic paste and fry till golden brown.

Add bhindi and all the other powder spices.Mix well.

Stir fry for 15 minutes on a low flame till they change color and are cooked.

Serve bhindi do pyaza immediately with chapatis, rice,paratha etc.
